Beef and Spinach Scramble

From The Paleo Diet book by Loren Cordain, Ph.D.

2 Tbsp olive oil

1 lb extra lean ground beef (I use only free range)

3 scallions (I have used 1 yellow onion)

2 cloves garlic, minced

1 tsp. freshly ground black pepper

1 tsp basil

1 c fresh organic spinach, washed and steamed (I use a package of cooked frozen organic - follow package instructions)

1 c fresh mushrooms (not in original recipe but goes extremely well & besides I love mushrooms & they are low carb)

4 omega 3 enriched eggs, scrambled

Celtic sea salt to taste (about ¼ to ½ tsp) 

In a large, heavy skillet, heat olive oil over medium heat.  Add scallions and garlic and sauté for a couple of minutes until golden;  then add ground beef, mushrooms, pepper, and basil.  Cook on low to medium heat until meat is thoroughly browned.  Turn heat up to medium/high and add cooked spinach, stirring for five minutes.  Add eggs and continue stirring for about one minute or until eggs are cooked.  Serves four.  Serve with fresh steamed broccoli or a lovely green salad (shown above with peperonatta).  Hope you enjoy as much as we do!! 

p.s.  Shopping and preparing  healthy homemade food can sometime become a boring chore.  But eating it and the health benefits are soooo worth it as far as I am concerned. 

I have a fabulous tip for you if you don't like to or have the time to cook fresh every day.  I always double my recipes (except for salads) and freeze half for the following week.  It tastes just as great and I just a add fresh veggie so I have a night off from cooking and don't have to order in foods full of trans fats, or who knows what!
