This recipe is both easy and delicious - also rich in protein & iron - makes for a good strong healthy body by "Healthy Eating". This was found by Kathleen Kennedy on Dr. Mercola's website - made a slight modification - had to share - really yummy!
4-5 Free Range or Organic Chicken Thighs
Juice of 2 Lemons
1/2 cup of Wheat Free Soy Sauce
4 cloves of Garlic (crushed)
1/2 tsp Black Peppercorns
3 Bay Leaves
4 Tbsp Olive Oil
1. Combine, cover, marinate in fridge for 1-3 hours
2. Bring to a boil over high heat, cover, simmer 30 minutes, sir occasionally - breathe in those beautiful aromatic fragrances
3. Remove lid, simmer to reduce sauce; about 20 minutes more
Serve with Cauliflower "rice" & your favorite green vegetable such as cooked Kale, fresh Ontario asparagus, etc.
